30 Days of Meals

A well stocked pantry is a wonderful thing.  I am always working on mine and was definitely interested when a friend of mine blogged about an easy way to accumulate enough food for 30 days of meals.  She suggested that the 30 days could be broken down into 10 of your family's favorite meals making sure to have enough ingredients on hand to make each meal 3 times.  Sounds easy enough!

Here's my list of meals.  They are easily made with frozen, canned and dry ingredients.

Pasta with olive oil, tomatoes, olives and mushrooms
Chili with rice and cornbread
Indian curry with chickpeas, sweet potatoes, spiced rice and peas
Chicken noodle soup (with or without meat) and dumplings
Cuban style black beans with rice and flat bread
Chicken pot pie with veggies
Hawaiin Haystacks with pineapple, slivered almonds, crunchy noodles, and coconut
13 bean soup with fresh rolls
Quick bean burritos (pinto)
Sticky chicken with rice, veggies and mandarin oranges

Of course, all of these meals would best be enhanced with the addition of a fresh vegetable and or fruit.  I also keep oatmeal, pancake mix and syrup on hand for breakfasts (we don't eat a lot of boxed cereal) and plenty of ingredients for bread (flour, yeast and oils), peanut butter and homemade jams for lunches.

And how wonderful that you have such a huge garden- you'll eat like kings this summer!
